I love to cook and I love food. Here’s the recipe I use to make a knock-off Olive Garden Gnocchi Soup. I swear it’s heavenly and remember to measure seasonings with your heart! Here is the list of ingredients:
- 4 cups chicken broth
- 1 carrot, shredded
- 3 celery stalks, chopped
- Garlic (I use about 4 cloves, but measure with your heart)
- 1 onion, chopped
- 1 lb chicken breast
- Pack of gnocchi noodles
- Seasonings: garlic powder, onion powder, salt, pepper, thyme
- 2 cups of half and half
- 2 Tbs of corn starch (this amount may vary)
- Big handful of spinach
- Some Parmesan to garnish
- Cube and cook your chicken in a large pot (season with salt, pepper, garlic powder). Once cooked remove the chicken from the pot.
- Now add your celery, carrots, onion, and garlic.
- Once soft (about 5 mins) add your cooked chicken and 4 cups of broth. Season with all listed seasonings. Bring to a boil.
- Once boiling add your gnocchi. Allow to boil for 3 minutes, then lower the heat, cover, and cook for 10 minutes.
- Once the gnocchi is cooked, add most of your half and half. With the remaining half and half whisk in the cornstarch. Pour it into your stove mixture. Let simmer until it’s thickened.
- Turn off the heat and add your spinach. Put the lid back on for a couple of minutes until the spinach wilts.
- Top with parmesan and serve!
